 It is prepared by melting dipotassium hydrogen phosphate and losing water molecules. It is a white crystalline powder or particle at room temperature. It has strong hygroscopicity in air. It is very soluble in water but insoluble in ethanol. The aqueous solution is alkaline and can inhibit food corruption and fermentation. The pH value of 1% aqueous solution is about 10.5. At 25 ℃, the solubility of potassium pyrophosphate in 100g water is 187G, It is hydrolyzed into potassium phosphate in acid or alkali solution, but the hydrolysis rate is very slow. It is mixed with water to form viscous slurry.
